Today I am grateful for the fact that I had the time and ingredients to make risotto – which I have not made for a long time. So, the tedious task of adding a bit of stock and stirring then adding a bit more and stirring as usual paid off with a sticky mass fragrant with porcini mushrooms. My husband does not always eat risotto, but today he did.
